Breakfast Recipe- 15-Minute Banana & Cinnamon Porridge

It’s definitely getting colder now (pretty much all day) so why not start the day off right with a thick and creamy porridge filled with banana to keep you going throughout the day and a dash of cinnamon to (hopefully) wake you up from that wintry slumber! I found this recipe on a blog called Kind Earth and really wanted to make it, not just because of the ingredients but because of how easy it is to make it vegan!  


I’ll go into that later but for now, let’s make some porridge! 

Ingredients 
Makes 1 bowl 

1 Small Banana 
50g Oats (roughly two sachets of porridge oats)
150ml Water 
100ml Milk 
1 tbsp Ground Cinnamon 
1/2 tsp Vanilla Extract 
1 tbsp Honey 

To start just slice up the banana! 

Next, add all the ingredients except for the honey into a small saucepan and let it cook on medium-high heat until the milk boils.

Once the milk is boiling, turn the heat down to low and let the porridge simmer for around 15 minutes, keep stirring every couple of minutes so it doesn't stick the bottom! 
After 15 minutes you should see a considerable difference in the thickness of your porridge, the banana should have softened down into the mix too. 


Now, simply pour the porridge into a bowl, add another sprinkling of cinnamon and your tbsp honey then you’re all ready to go! 


This has got to be the easiest recipe I’ve ever put on here?! 
The porridge doesn't take any more than 15 minutes overall and you’re left with this creamy, tasty breakfast that’s really gonna put a smile on your face! 
One great thing about this recipe is how easy it to “vegan-ise”, simply swap the milk for a plant-based alternative and swap your honey for maple syrup or agave nectar and you have a deliciously sweet breakfast that’s vegan too! 
Obviously, you don’t have to stop there, you could add nuts, dried fruit, different spices, or maybe peanut butter to this to make it your own! All of these swaps still keep it vegan too so it’s so easy to make this each morning into a slightly different breakfast whilst still keeping it plant-based. 
If you need some morning nourishment in these chilly and testing times, then maybe this 15 minute porridge is a great way to start!
