I don’t miss much since becoming vegetarian, I’ve been telling everyone that going vegetarian when I did was one of the best choices I ever made, with so many people changing their diets and lifestyles away from meat and dairy, there are now so many options that are just as good if not better than actual meat! But, the only thing I have yet to find is a solid vegan fish substitute, every “fish” product I’ve ever tasted has just been crumbly and vinegary, nothing like real fish, but I think I might be on to something with this recipe!
There are quite a few ingredients to this but there's only three steps in the process and I promise it’ll take less than 10 mins to put together before you put them in the oven! I think this could become something I do on a weekly basis for dinner as it was so much fun, tasted great, and made a change from the things I usually eat. To get the fishy flavour I used dried seaweed that I got in a box from Tesco for £3 as part of the breadcrumb on my tofu, you can really taste the sea in it and with a sprinkle of sea salt and vinegar on top of your fish fingers you’ve got yourself a pretty good quality fish substitute!
200g Extra-Firm Tofu, sliced into long rectangles about half an inch thick
2 tbsp Plain Flour
60ml Soy Milk/ Diary-Free Milk
2 tbsp Soy Sauce
1 tsp Lemon Juice
100g Golden Breadcrumbs
1-2 tbsp Crushed Seaweed
Wicked Lemon Pepper Chicken Seasoning (or any lemon and herb seasoning)
Salt & Pepper
Preheat your oven to 190C/ 170 Fan/ Gas Mark 5 and coat your tofu fingers in flour.
Next pour your soy sauce, lemon juice, and milk into a bowl and whisk together, then in a separate bowl combine breadcrumbs, seaweed, and lemon and herb seasoning. Now get a little factory line going of dipping the floured tofu in the soy sauce mixture then coat it well in breadcrumbs, then repeat with the next tofu finger until all your tofu is well coated!
Arrange your fish fingers on a greased baking tray or baking mat then put them in the oven for 30-35 mins until the coating is crispy!
How quick was that?! You could whip these up whenever you feel like it; to cheer yourself up, to serve to friends and family or maybe try them out on the little ones and see if they enjoy tofu as well! I couldn’t get over how fast this was to put together and because you won't use all the ingredients in one go you can just buy some more tofu and make them all over again next week. I’ve already used part of this recipe again to make breaded tofu for another delicious recipe I've got coming up soon, so not only is this recipe super simple it's really versatile to make breaded tofu for any dish!
For these fish fingers though, they’re perfect with some sea salt and vinegar and alongside a big pile of mashed potato and veg after a long day. I know I’ll be making these again and I can’t wait to let my friends and family try them too!
