Chocolate-Filled Pancakes

A pancake recipe was one of the first recipes I ever uploaded to the blog, but I think you’ll agree that this one tops it by a mile. Not only is this a recipe for big fluffy American-stye pancakes, but they also have a thick layer of chocolate-spread stuffed in the middle, much like normal pancakes they’re super easy to prepare, take less than 10 mins from frying pan to plate...but these are not your average pancakes. 


Ingredients 
Serves 2 

135g Plain Flour 
1 tsp Baking Powder 
1/2 tsp Salt 
2 tbsp Caster Sugar 
130ml Milk 
1 Egg, beaten 
2 tbsp Butter, melted 
2 heaped tbsp Chocolate Spread, melted 


Start off by combining flour, baking powder, salt and sugar in a medium sized bowl. 


In a large mug, whisk the milk and egg together then pour in the butter and whisk again. 


Pour the wet mixture into the dry and beat with a fork until no lumps remain, it won't take very long to do this, if you see lumps just beat again and they’ll soon break up. Once smooth, leave the mixture to stand for 3-4 mins to allow it to thicken. 


Heat a frying pan over medium heat with a tsp of oil. Add a ladle of the pancake mixture into the pan and let it fry underneath for about a minute. 


Pour your melted chocolate spread over the center of the pancake, leave to infuse for another minute. 


Get another ladle of pancake mix, about half the size of the first, and pour this on top of the Nutella, this will probably run but let it run and fry for a minute before flipping the pancake over to fully cook for another 2 mins on the opposite side. The pancake should be spongy and lightly golden. 


Repeat this with your leftover pancake mix and transfer to a plate to tuck in! 


I couldn’t believe how tasty these turned out! I was expecting the chocolate spread to be melted inside but it firmed up a bit during frying, but that's ok it still tasted amazing. I know I’ll definitely be making these a-lot more often, both with and without the chocolate spread, I’ve never made pancakes that were that fluffy before, that's why I've said the recipe is for two because these pancakes are so thick and so full of chocolate that I don't think you need more than 1 per person (but you have as many as you want, I’m not judging). As I said at the start, these pancakes are really quick to prepare and fry so you could even make them as a special work/school breakfast if you felt like it! This recipe has got me thinking of all sorts of ideas, you could fill these with fresh jam, lemon curd, what the hell even chop up some pre-cooked vegan bacon and slide it between the layers for a sweet and savoury treat!
